Technical functionality
Tomat-O-Red® is available as a ready-to-use powder or liquid formulation,
and as an oleoresin for use in the preparation of emulsions and micro emulsions
by color compounders. In the ready-to-use formulations, lycopene crystals are
coated to induce stability throughout a wide range of temperatures, pH and
processing conditions. Tomat-O-Red® formulation is made to protect the
Lycopene from oxidation and light damage. The formulations are made to reduce
any color shift during processing, a common problem with other red colorants
of food.
The many shades of Tomat-O-Red®
LycoRed has developed the expertise to fine tune the Tomat-O-Red® to
produce a variety of shades to satisfy the preferences of
the consumer. Ready-to-use formulations generate shades from
cherry to strawberry red. Tomat-O-Red® oleoresin
produces shades ranging from yellow to orange when formulated
by a color compounder.

in the US, Europe and Japan.

Tomat-O-Red® Product Line
Tomat-O-Red® 10% CWD
This ready-to-use formulation is a free flowing powder. The
cold water dispersible powder readily disperses tomato
lycopene crystals suspended in the aqueous medium.
Highly concentrated Tomat-O-Red® 10%
CWD contains 100,000ppm lycopene, while only 5ppm lycopene
is required to provide a red coloring. Increasing or decreasing
the loading will impact the intensity of the color.
Tomat-O-Red® 2% SG
A ready-to-use liquid formulation, Tomat-O-Red® 2%
SG is prepared by dispersing stabilized tomato lycopene crystals,
1-3 microns in size, into glycerol. When introduced into
a beverage or a water-based food, the glycerol instantly
dissolves and the tiny crystals are evenly dispersed, reflecting
a red color. Tomat-O-Red® 2% SG is a concentrate containing
20,000 ppm lycopene, compared to the 5ppm lycopene required
to produce red coloration. As with the cold water dispersible
formulation, increasing or decreasing the loading will impact
the intensity of the color.
Tomat-O-Red® 8%
Tomat-o-Red® 8% oleoresin is the colorant of choice
for providing foods with both color and health benefits.
Tomat-O-Red® oleoresin is standardized to 8% lycopene.
The oleoresin also provides other antioxidant phytonutrients
natural to tomatoes. Tomat-O-Red® is used most effectively
to color foods after it is emulsified or solubilized to form
a transparent micro-emulsion or an opaque emulsion. A skilled
color compounder is required for the introduction of Tomat-O-Red® into
aqueous food solutions however, the added advantages that
come with marketing a food with all the health benefits of
tomato, offset added production costs.
