The topic of the speech will be:
Lycopene is the natural red colour from tomatoes which has been successfully used to colour products as diverse as soft drinks, chewing gum, dairy products and surimi.
The most recent challenge has been to replace carmine because of increasing consumer pressure

This talk will describe the recent innovations in lycopene formulation technology focussing on increasing the colour expression of lycopene to match the cost in use of carmine and also delivering a shade similar in application to that of carmine.

The stability of lycopene to pH, light, oxygen and Vitamin C compared to carmine and other natural red colour options will also be discussed.

The points raised in the talk will be illustrated by examples from the international market place.
